Shakshuka is a North African & Middle Eastern dish. It features rich tomato sauce that's full of warming spice & aromatics. Eggs poach directly in the sauce, the egg whites pick up the flavour, & the runny yolk adds a layer of creaminess. And with a dish this saucy, it's only right to have toasty pita to soak it all up. We love that it's such a versatile meal—it can be breakfast, brunch, lunch, or dinner!
MEAL KIT CONTENTS:
8 oz chickpeas
4 oz feta cheese
2 whole wheat pitas
1 oz Za’atar spice blend*
2 oz Moroccan spice blend
½ green bell pepper
¼ red onion
14 oz crushed tomatoes

Adjust top rack 6-inches from heat source & preheat broiler
Peel & roughly chop onion
Open can of crushed tomatoes
Core & thinly slice bell peppers
Remove cilantro leaves from stem
Step 1: Roast peppers
Toss bell peppers in salt, pepper, & olive oil on a sheet pan. Roast for 15 minutes until slightly charred.
Step 2: Prepare sauce
Heat 1 tablespoon oil in a large skillet over medium high. Add onions, garlic, & a pinch each of salt & pepper, & cook until fragrant, about 30 seconds. Add Moroccan spice & cook, stirring, 30 seconds. Stir in tomatoes, chickpeas, ¼ cup water, ½ teaspoon salt, & a few grinds of pepper. Bring to a boil, reduce heat to medium, & simmer until mixture is stewy & thick, about 2 minutes.
Step 3: Cook eggs
Use a spoon to make four spaces in the sauce, then crack 4 eggs directly into those spaces. Sprinkle with salt & pepper. Cover skillet; continue to simmer sauce until egg whites are just set & yolks are still runny, 3–4 minutes (watch closely so eggs don't overcook).
Step 4: Toast bread & serve
While eggs are cooking, brush pita all over with oil and sprinkle with za'atar. Broil directly on top oven rack until golden brown and crisp, 2–4 minutes (watch closely). Remove from the oven & cut into wedges.
Step 5: Finish & serve
Top shakshuka with cilantro leaves & crumbled feta cheese. Enjoy!
