Inspired by our favourite furniture store (we know you know!), these Swedish meatballs are nestled over garlic mash potatoes, smothered in a delicious creamy gravy & served with a bit of our Zesty cranberry sauce on the side – this is comfort food at its best!
MEAL KIT CONTENTS:
12 oz ground beef & pork blend (8 oz beef, 4 oz pork)
10 oz potatoes
4 oz onion & garlic blend
2 oz seasoned breadcrumbs
2 oz whole milk
2 oz cream/butter/garlic blend
4 oz veggie stock
4 oz beef stock
1 oz flour
1 oz parsley
4 oz cranberry sauce
8 oz cream Sauce*
*Cream sauce: 8 oz cream, 2 teaspoons soy sauce, 1 teaspoon Dijon

Vegetable or olive oil
2 oz of butter
KITCHEN ITEMS NEED:
Sheet pan with parchment paper/aluminum foil
Cutting board & knife

Bring a medium pot of water to a boil
Preheat oven to 350 degrees
Line sheet pan with parchment paper/aluminum foil
Remove leaves from stem & finely chop parsley
Cut potatoes into 1-inch cubes (peeling optional)
Step 1: Boil & mash potatoes
Add potatoes to boiling water & cook for 20-25 minutes until very tender. Drain with strainer/colander, add butter/garlic/cream mix & mash. Season with a pinch of salt & pepper, & add extra butter if you wish. Cover with lid & set aside.
Step 2: Make meatballs
In a large bowl, add pork/beef blend, onion & garlic blend, breadcrumbs, egg, & mix well. Add milk & season well with salt & pepper. Shape mixture into small, round balls.
Step 3: Sear meatballs
In a large skillet, heat oil on medium heat. When hot, gently add your meatballs & brown on all sides. Transfer to lined baking sheet & place in oven, roasting further 15 minutes or until fully cooked through.
Step 4: Make sauce
Wash out skillet used to sear meatballs. Warm over medium high heat & melt measured butter. Whisk in flour & stirring continuously, for 2 minutes, allowing the flour to cook through. Add veggie & beef stock & continue to stir. Add cream sauce & bring to a simmer & allow the sauce to thicken, continuing to stir until you get to your desired consistency.
Step 5: To serve
Divide mash between plates & equally divide the meatballs. Pour gravy over the meatballs & garnish with parsley. Serve with cranberry sauce on the side and enjoy!
