COOKING INSTRUCTIONS
Step 1: Cook potatoes
Place potatoes in a medium saucepan, along with 1 teaspoon salt and enough water to cover by 1-inch. Cover and bring to a boil, then uncover and cook until easily pierced with a fork, about 10 minutes. Reserve ¼ cup potato water, then drain and return potatoes to saucepan. Cover to keep warm.
Step 2: Roast broccoli
On a rimmed baking sheet, toss broccoli with 1 tablespoon oil and garlic; season with salt and pepper. Roast on center rack until broccoli is tender and browned in spots, 8–10 minutes.
Step :3 Cook steak
Heat 1 tablespoon oil and half herb butter in a medium skillet over medium-high. Add steaks and cook until browned all over, 3–4 minutes per side for medium-rare, basting the steaks with the butter oil mixture through the cooking process (or longer for desired doneness). Once cooked, Remove skillet from heat and spread remaining butter over top of steaks and let steaks rest in skillet off the heat while you finish preparing the mashed potatoes.
Step 4: Finish potatoes
Add 2 tablespoons butter, reserved potato water, and mash using a potato masher or fork. Stir in cheese, sour cream, and half of the chives until cheese is melted, season with salt and pepper.
Step 5: To serve
Thinly slice steak; serve, pouring pan juices over, alongside broccoli and mashed potatoes; sprinkle remaining green onion over top. Enjoy!
