Slice & core bell pepper
Pat shrimp dry & season with some of the cajun spice blend, saving the rest
Bring medium pot of water to boil with a pinch of salt
Roughly chop basil
Step 1: Cook pasta
Bring a large pot of salted water to a boil. Cook the pasta for 8-10 minutes until al dente. Drain.
Step 2: Cook shrimp
Heat a drizzle of olive oil in a large pot or skillet over medium-high heat. Add shrimp & cook for 2-3 minutes until just starting to turn pink – the shrimp will finish cooking later. Remove from pot and set aside.
Step 3: Cook peppers
Heat another drizzle of olive oil in the same pot over medium-high heat. Add onion, garlic, chili flakes if using, remaining spice blend, & bell peppers, cooking for about 3-5 minutes until peppers are just tender.
Step 3: Make sauce base
Add a pinch of salt & pepper, then pour in the stock & half and half into the pot. Add the cream cheese. Whisk until smooth. Bring the sauce to a gentle simmer & cook 2 minutes.
Step 4: Finish & serve
Stir in half the parmesan. Add shrimp & veggies, cooking for a further 2 minutes. Shrimp should be fully cooked & pink. Add spinach & stir through.
Add pasta & toss well. Remove from the heat & stir in half the chopped basil. Serve immediately topped with remaining basil & parmesan. Enjoy!
