Pad Thai with Shrimp (or Chicken) & Crushed Peanuts (GF)


8 oz shrimp

8 oz rice noodles

2 oz scallion  

3 oz carrots

3 oz bean sprouts

1 oz basil

1 oz onion garlic mix

1 oz lime

2 oz chopped peanuts   

4 oz Zest Pad Thai Sauce*


* Peanut butter, rice wine vinegar, tamari, coconut nectar, sriracha, garlic, ginger



Olive Oil

Salt & Pepper



Large pot for water & noodles

Large skillet

Bowl for shrimp

Cutting board & knife

Paper towel

Colander/strainer for noodles

    • Fill medium size pot with salted water & start to boil 

    • Rinse shrimp & pat dry with paper towel. Set aside in a bowl

    • Thinly slice the scallion lengthways into 2” thin pieces

    • Julienne the carrots into thin strips (peeling optional)

      • Slice the lime into wedges


      1: Prepare Noodles

      Cook noodles in boiling water for 3 minutes, or until noodles are al dente. Drain, quick rinse with cold water & set aside.

      2: Cook Shrimp  

      In a large skillet, heat oil over high heat. Add shrimp & carrot with the garlic & onion mixture - cook for 2 to 3 minutes stirring frequently until the shrimp starts to turn pink. Add the bean sprouts, scallion & drained noodles. Coat noodles, veggies & shrimp in Zest Pad Thai Sauce & cook for an additional two minutes. Remove from heat.  

      3: To Serve

      Divide into plates or bowls, garnish with chopped peanuts, basil & lime wedge!
