Pad Thai with Tofu & Crushed Peanuts (Vegan, GF)

MEAL KIT CONTENTS: 

8 oz tofu

8 oz rice noodles

2 oz scallion  

3 oz carrots

3 oz bean sprouts

1 oz basil

1 oz onion garlic mix

1 oz lime

2 oz chopped peanuts   

4 oz Zest Pad Thai Sauce *

 

* Peanut butter, rice wine vinegar, tamari, coconut nectar, sriracha, garlic, ginger

Olive Oil

KITCHEN ITEMS NEEDED:

Large pot to boil water for pasta

Large skillet

Bowl for tofu

Cutting board & knife

Paper towel

Colander/strainer for noodles

    PREPPING INSTRUCTIONS
    • Fill medium size pot with salted water & start to boil 

    • Medium dice tofu pat dry with paper towel. Set aside in a bowl

    • Thinly slice the scallion lengthways

    • Slice the lime into wedges

    COOKING INSTRUCTIONS

    1: Prepare Noodles

    Cook noodles in boiling water for 3 minutes, or until noodles are al dente. Drain & set aside.

    2: Cook Tofu  

    In a large skillet, heat oil over high heat. Add tofu & carrot with the garlic & onion mixture - cook for 2 to 3 minutes stirring frequently until the tofu starts to turn brown. Add the bean sprouts, scallion & drained noodles. Coat noodles, veggies & tofu in Zest Pad Thai Sauce & cook for an additional two minutes. Remove from heat.  

    3: To Serve

    Divide into plates or bowls, garnish with chopped peanuts, basil & lime wedge!
