    PREPPING INSTRUCTIONS

    Grate the carrot (peeling optional)

    Take leaves off stem and roughly chop cilantro

    Peel and dice avocado

    Zest lime & cut into wedges

    PREPPING INSTRUCTIONS

    Step 1: Cook Rice

    Pour rice into a medium saucepan. Add measured water with a pinch of salt. Cover and bring to boil, reduce to low heat and simmer for 15-18 mins or until all water is absorbed. Remove the lid, fluff with a fork, cover & set aside.

    Step 2: Char corn

    Heat a drizzle of oil in a large skillet over a high heat. Add the corn and cook until lightly charred, 4-5 minutes. Add corn, squeeze of juice from 1 lime wedge and diced avocado to a large bowl. Season with salt and pepper and set aside.

    Step 3: Make beef base

    Return the frying pan to a medium-high heat with a drizzle of olive oil. Add the ground beef & onion/garlic blend and cook, breaking up with a spoon, until just browned, 4-5 minutes. Add the Mexican blend Add the carrots and cook until starting to soften, 3-4 minutes. Add diced tomatoes and beans and cook for a further 5 minutes.

    Step 4: Finish rice & serve

    Stir in lime zest and another squeeze of lime juice into rice, mixing. Divide the lime rice in bowls. Top with beef, charred corn & avocado mix and cheddar. Drizzle with salsa crema and sprinkle with chopped cilantro.
